As I said, Panama at the time fell under American influence, we know that hand of Franklin Roosevelt and Lincoln is long. And as the gringo influence is based on the hunger for it was clear that food was also to be Made in USA.


But I say that there was no Panamanian clearly a varied cuisine. I ate every day in the bar-restaurant, Café Boulevard Balboa, and the menu of the day, strangely enough, was quite similar to those of a restaurant (read it with a Caribbean accent, I was not angry or I get angry) English, so I did not miss the food I am used to. Panama may not have a cuisine of its own, but in return, provide all world cuisine. There are Chinese, Japanese, Italian, Arabic, Argentinean, Mexican, English, Peruvian. And I, for dinner, I opted for the latter. Stuffed potato, Andean chicken, rich Cusqueña beer or something and custard dessert (funny that follow the twists of language calling custard), which was almost pure pump bacon from heaven, of course I loved it.
